My kids are on the verge of being fussy eaters as they get older. Charley is more open to new foods than what Kirsten is, but she's always been that way so i'm kinda used to it. Frequently I will just cook whatever I know they will eat even though I am wanting or craving something different so I figured i'd give my kids a weeks test run on a variety of food combinations that is not familiar to them. The first simple but tasty one was fried peppers and vegetables in a turkey kebab. I'd say it was a 50-50 hit and miss....Charley loved it, Kirsten didnt, well not at first!
I also gave two of these kebabs to a friend of mine who text me later to say she wanted more, that her and her hubby loved them! Ego restored I discounted Kirsten's review and made it a success by my own denomination!! ;)
What you will need: (for 4 people)
- 4 Pitta bread
- 1lb diced turkey or 3 boneless skinned turkey breasts
- 1 red pepper
- 1 yellow pepper
- 1 green pepper
- chopped carrot sticks
- 1 sliced onion
- 1 clove of garlic or garlic butter
- Iceberg lettuce
- Mayonaise
Brown off the turkey in the frying pan with a crushed clove of garlic and 2 tbl spoons of water.
Gently fry the chopped vegetables the same way with garlic (or you can use garlic butter) Sprinkle with a little black pepper.
Put a layer of chopped lettuce in the pitta bread, a layer of turkey, layer of vegetables then a coating of mayonaise. Add more lettuce and more turkey/vegetables if desired.
Serve with fries or a side salad.

Cooking time: 10 mins
